Can I see who opened a document?

Yes. Opening is an event on the timeline, with its time.

Can I export the log?

Yes. The audit trail of any document downloads as a CSV.

Does a reminder reset the clock?

No. A reminder is its own event on the timeline and does not change the expiry date.
